Roasted Sugar Pumpkin

Ingredients

  • 1 small sugar pumpkin
  • 2 tablespoons oil (extra-virgin olive oil or avocado oil)
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper (omit if using in sweet dishes)

Directions

  1. Preheat oven to 400 F
  2. Cut pumpkin in half, remove seeds
  3. Coat pumpkin skin and insides with olive oil.
  4. Sprinkle with salt, sprinkle with pepper if not using in sweet recipies.
  5. Place cut side down on cookie sheet (optionally covered with parchment)
  6. Roast 35 to 45 minutes, until very soft.
  7. Remove from oven, allow to cool, peel skins.
  8. Puree in food processor.
  9. Store for up to 5 days.
