Roasted Sugar Pumpkin
Ingredients
- 1 small sugar pumpkin
- 2 tablespoons oil (extra-virgin olive oil or avocado oil)
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper (omit if using in sweet dishes)
Directions
- Preheat oven to 400 F
- Cut pumpkin in half, remove seeds
- Coat pumpkin skin and insides with olive oil.
- Sprinkle with salt, sprinkle with pepper if not using in sweet recipies.
- Place cut side down on cookie sheet (optionally covered with parchment)
- Roast 35 to 45 minutes, until very soft.
- Remove from oven, allow to cool, peel skins.
- Puree in food processor.
- Store for up to 5 days.
