Vegan Cinnamon Chocolate Chip Waffles

Ingredients

Flax Egg

  • 1/8 cup ground flax seed
  • 1/4 cup water

Vegan Buttermilk

Dry Ingredients

  • 1 cups whole wheat flour
  • 3/4 cup all purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/4 cup melted coconut oil

Instructions

  1. Preheat waffle iron
  2. Make the flax egg. In a small bowl combine the ground flax and water, stir and set aside.
  3. Make the vegan buttermilk. In a large measuring cup or bowl measure 1 3/4 cup homemade almond milk, add 1 teaspoon apple cider vinegar and 1 teaspoon pure vanilla extract, stir and set aside.
  4. In a large bowl combine and stir the flour, baking powder, salt, sugar, and cinnamon.
  5. Add flax eggs and buttermilk to dry ingredients, while mixing add melted coconut oil. Stir until just combined, set aside and allow to thicken.
  6. Add batter to waffle iron, add chocolate chips as desired, enjoy.
