Fluffy Cinnamon Chocolate Chip Pancakes
Ingredients
- ½ cup all purpose flour (60g)
- ½ cup whole wheat flour (57g)
- 2 tablespoons organic sugar (25g)
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 cup homemade almond milk
- 1 tablespoon apple cider vinegar
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- Chocolate chips
Preparation
- In a 2 cup or larger liquid measuring cup, add almond milk, apple cider vinegar, and vanilla, and stir to combine
- In a large bowl, add the flour, sugar, baking powder, cinnamon, and salt. Stir to combine.
- Pour the liquid mixture into the dry mixture and whisk until just combined. The mixture may contain some lumps.
- Preheat pan, allowing batter to rest approximately 2 minutes.
- Cook pancakes using batter.
